  • Abstract:

As a plant that can be used both as medicine and food, there has been relatively little research on the fermented products of Mesona chinensis Benth, and the substances responsible for its medicinal effects before and after fermentation remain unclear. This study aimed to clarify the material changes and potential pharmacological mechanisms of Mesona chinensis Benth before and after fermentation by Kombucha. Mesona chinensis Benth kombucha was prepared through fermentation. By using UPLC-Q-TOF-MS/MS and network pharmacology, the impact of Kombucha growth on its polyphenol content was determined, and the natural compounds in it were identified. Based on this, the application potential of Mesona chinensis Benth kombucha in various disease areas was deeply investigated. The results showed that during the 4 day fermentation period, there was a negative correlation between the growth of Kombucha and the consumption of polyphenols. Fifty natural compounds were identified in the fermented kombucha. Through the established compound-target-disease network, target proteins with a high degree of nodes such as SRC, AKT1, and members of the PIK3 family were discovered, highlighting the crucial role of these target proteins in the treatment effect of kombucha. GO biological function annotation and KEGG pathway enrichment analysis indicated that the predicted target genes were significantly enriched in aspects such as receptor signal transduction, plasma-membrane-related cell components, and protein kinase activity. The enrichment in pathways related to cancer and neurodegenerative diseases suggested its potential in treating related diseases and maintaining vascular health.
